Bright Asian Salad
Description
A colorful crunchy salad with Asian style dressing.

Ingredients

large carrot (finely sliced) 1
cob corn (kernels removed) 1⁄2
telegraph cucumber (finely sliced) 2 c
long green beans (ends removed) 1⁄2
red onion (finely sliced) 1 bn
corriander (rough chopped) 2
garlic chives (finely chopped) 1 c
beansprouts 1 t
grated ginger 3 T
soy 2 T
sesame oil 1⁄2
lime (juice of) 1⁄2
lemon (juice of) 6
mushrooms (finely sliced)Summary

Instructions
Combine all the vegetables (not including the ginger) in a large bowl.
In a separate bowl combing the lime and lemon juice, ginger, soy and sesame oil and a good hit of salt and pepper. Mix well and pour over the salad. Make sure the liquid coats all of the salad.
Allow the dressing to absorb in to the vegetables for 30 minutes before serving.
Notes
If you like the dressing really zingy - use the juice of one whole lime
