Honey King Prawn

Ingredients

1⁄2 kg
raw king prawns (de-shelled, veins removed)
4 T
honey
2 T
kecap menis (dark sweet soy)
2 T
sweet chilli suace
2 T
sesame or penut oil
1⁄2  
lemon (juice of)
1 c
plain flour
2  
eggs
3⁄4 c
sparkling water
1 t
salt
1 t
white pepper
1 T
sesame seeds
1  
shallot or spring onion (chopped)
2 l
vegetable oil

Instructions

First make the batter: combine flour, eggs, sparkling water, salt & pepper in a large bowl. Whisk until smooth.

Place prawns in the batter, mix through.

Heat fry pan on low heat, add the peanut oil, honey, sweet chilli, Kecap menis and the lemon juice. Stir will well combined, leave to warm through.

Meanwhile, take a large sauce pan or wok and bring 2 litres of vegetables oil up to medium-high heat.

Once up to temperature, carefully slip 1/2 the prawns into the oil. Cook for 5-7 minutes until batter turns a pale golden colour. Stir gently 2-3 times during cooking process.

Remove prawns with tongs or slotted spoon, place in a bowl with absorbent paper. Repeat cooking process with the remaining prawns.

Remove the paper. Pour over sauce mixture. Mix through and place on a serving plate. Sprinkle over the sesame seeds and garnish with chopped shallots.
