Tangy apricot and seeded mustard sauce

Description

An awesome dipping sauce, goes well with chicken & fish.

Tangy apricot and seeded mustard sauce

Ingredients

15  
plump dried apricots (finely chopped)
4 T
seeded mustard (i used organic)
1⁄2  
large brown onion (finely chopped)
3 clv
garlic (chopped)
3⁄4 c
dark malt vinegar
4 T
wocestershire sauce
4 T
brown sugar
1 T
tabasco sauce (more if you like it hot)
1⁄2 c
extra virgin olive oil
1 l
water
1⁄2 c
ketchup (good quality)
   
seasoning (to taste)

Instructions

Combine the apricot, onion & garlic with the olive oil on a medium heat.

Cook for 3-4 minutes or until colour heightens.

Add the mustard, stir well and cook for a minute.

Add the rest of the ingredients, reduce to a low simmer and cook for 15-20 minutes. The mix will reduce down to a thicker consistency.

Remove from heat, blitz to a smooth consistency. Taste and season, add more sugar if necessary.

Serve hot or cold.
