Wholemeal Bran Muffins

Description

Sugar free bran muffins.

Ingredients

2 c
wholemeal flour
1 c
bran
3⁄4 c
splenda (or sugar alternative)
2 1⁄2 t
baking powder
1 pn
salt
2  
egg
4 T
olive oil
1 c
low fat milk

Instructions

Pre heat oven to 180 degrees Celcius.
Place muffin cases in muffin tray, or grease muffin tray with a little butter.
Sieve flour into a bowl and tip in excess bran. Add the bran, sugar substitute,salt and baking powder, stir through.

Beat egg in a cup add the oil and milk, stir through.

Create a well in the flour and slowly add the milk mixture. Stir through until the mixture is even.
Spoon the mixture evenly between the muffin cases.

Bake for 35 minutes or until the muffins just start to brown.

Notes

For extra sweetness peel and chop an apple into small cubes and sprinkle on top of the muffins before placing in the oven.
